We received the most wonderful surprise when we did a friend a favour recently. We expected nothing and yet our gesture was returned with further kindness.

We were gifted this amazing Banana Bread Loaf because we were able to help someone in need. Think we got the better end of the stick though. Knowing that we love all things made with Coconut Oil, this gorgeous person went on the search for a recipe where she could use our Tanna Farms Coconut Oil and surprise us with a baked goodie. It was SO good that we took a few snaps before it was devoured and asked for the recipe which we’re sharing with you today! It uses Gluten Free ingredients but that isn’t necessary if you don’t have them or need them.

If you’re not up for the fancy toppings this is ridiculously delicious served a little bit warm with lashings of something naughty on top… Bon App├ętit!


Banana Bread by our Tanna Farms friend…


  • 1 1/2 cups gluten-free plain flour
  • 1 cup desiccated coconut
  • 1/2 cup brown sugar (or sugar of your choice or even add some extra mashed banana as a complete substitute)
  • 2 tsp gluten-free baking powder
  • 1/2 tsp bicarbonate of soda
  • 1 cup banana, mashed
  • 2 eggs, lightly whisked
  • 2 tbl spoons maple syrup
  • 10g butter
  • 2 large just-ripe bananas, thickly sliced diagonally (for serving)
  • Maple Syrup, extra for serving
The how to:

  • Preheat oven to 180C. Grease and line a loaf pan.
  • Combine flour, coconut, sugar (don’t put banana’s in yet if your subbing for the sugar), baking powder and bicarbonate of soda in a bowl.
  • Whisk the mashed banana, oil, egg and maple syrup in a bowl. Add to the flour mixture and combine.
  • Spoon into prepared pan and make it smooth on top. Bake for 1 hour or until a skewer inserted in the center comes out clean – keep an eye on it.
  • Set aside for 5 mins before turning onto a wire rack to cool.

To serve:

  • Cut the banana bread into slices and toast. Meanwhile, melt butter in a non-stick frying pan over high heat. Add the banana and cook for 1 min each side or until browned.
  • Place the banana bread on plates and top with the toasted banana and drizzle with a little extra maple syrup.

    Far out, yum right!
