Easter is just around the corner and what is it with Easter Egg Chocolate that makes it so irresistible? Even if it’s bad cheap egg chocolate there is something about it that’s totally moreish and before you know it there’s an Easter egg size bulge hanging over your waist band.
Well fear not. Our wonderful friend Wick Nixon (who loves our products) has created these amazing Chocolate Macaroons that are completely moreish and yet completely good for you. The best part, they contain The Good Stuff – Coconut Oil and Crushed It Peanut Butter…yummo…
Raw Chocolate Macaroons
In a medium pot, bring the coconut oil, honey and cocoa powder to a gentle boil over a medium heat, stirring frequently. Boil for 2 minutes.
Stir in the peanut butter until melted, pressing out any clumps with a spoon, and remove from the heat. Add the rolled oats, desiccated coconut, flaxseeds, vanilla and salt and stir until the mixture becomes smooth.
Line a baking tray with baking paper or a baking sheet and drop teaspoons of the cookie mixture onto the cookie sheets, shaping with damp hands if necessary.
Refrigerate until firm, approximately an hour. Store in an airtight container in the fridge. The challenge is not to eat them all at once!
