Not sure about you, but if you’re reading this you’re probably (a) a lover of Banana Bread and (b) looking for a healthy recipe. Well, we’ve got you covered!

I’ve read a few blogs by nutritionists who in fact state that Banana Bread is one of the foods they just won’t eat and avoid altogether! I’m thinking they haven’t seen this recipe from Georgie at I Am Co. I think the nutritionists are referring to the version in cafes. You know the kind, where you go to a cafe to meet up with friends and you think to yourself ‘I’ll be healthy and have a slice of Banana Bread with my Latte’ … truth is, unless the bread is made with ingredients such as these below and this is clearly stated where you’re buying it from, then you may as well have the big gooey piece of Caramel Slice on offer next to it.

Our Claire gave this one a whirl in the Tanna Farms test kitchen but sadly, despite the warning at the bottom of Georgies post, it didn’t last long in her house – but that’s best sign of all right? That you’re onto a good thing? It’s healthy and gets devoured? We think that’s spot on! Have a go at this and make sure you tell us and show us your efforts. I AM Co Healthiest Banana Bread

Ingredients (sub where you need to):
1/2 cup buckwheat flour (or spelt if not GF)
1/2 cup almond meal
1 heaped teaspoon baking soda
1 heaped teaspoon cinnamon
1 teaspoon organic coconut sugar
1/2 teaspoon Himalayan rock salt
4 – 5 dried dates chopped roughly
1 tablespoon cacao nibs
1 tablespoon raw sunflower seeds (for the top of loaf)
3 large very ripe bananas
2 free-range eggs
3 tablespoons Tanna Farms coconut oil (melted)
3 tablespoons milk (of your choice – cows, almond, coconut)
1 tablespoon raw apple cider vinegar

How to:
Heat the oven to 180’C on fan bake.
Throw all dry ingredients (except sunflower seeds) into a large mixing bowl and stir together.
In a separate bowl, whisk together eggs, coconut oil, milk and vinegar.  Then add the bananas and roughly mash these through as you mix (not too smooth).
Add the wet ingredients to the dry and fold through until fully mixed.
Pour mixture into a lined loaf tin. Sprinkle the top with sunflower seeds and extra cinnamon.
Place in bottom tray of oven and leave to cook for about 50 minutes or until a knife comes out clean.
Once ready, take out from oven and leave to cool for at least 30 minutes before devouring.
Delicious on its own or spread with some coconut oil, butter or lashings of peanut butter.

‘*Warning: Avoid baking this unless you have others around to help you eat it. Otherwise you’ll realize you and your partner have devoured a loaf between the two of you in two days.  Not as hard as it sounds, in fact a very easy and delicious feat.  But probably not recommended.’
