It’s Mango season!!!
There is nothing better than heading to the local Mama’s food market here in Vanuatu to collect an abundance of organic ingredients (which are cheap as chips) then bring them home to create something special and healthy for your family – this is exactly what we did today!
We approached mango season with trepidation this year. Normally from about mid-December there are mangoes as far as the eye can see at the local fruit and veg markets, but with TC Pam ripping through our beautiful island last year and taking with her a huge amount of fruit trees, we just weren’t sure what we’d be left with.
There is by no means the usual mountains of mangoes but good news is there are still quite a few about and the Ni-Vanuatu lucky enough to have fruiting mango trees in their garden are quite happy to be earning a few extra vatu by selling them. So, what do we do with this selection of beautiful fruit? We make a delicious smoothie! This combo of local organic bananas, organic mango and our Naturally Organic Coconut Oil is so good – it will be at the top of your ‘go to’ smoothie list that’s for sure.
(Little tip: freeze your mango cheeks/fruit in portions while they’re in season so you can enjoy this yummy concoction at any time of the year).
Mango Banana Smoothie
1 cup unsweetened almond milk or coconut milk blend (or any other milk but these make it a dairy-free gem)
1 organic mango, sliced
1 organic banana, peeled
1 tablespoon maple syrup (or any other sweetener of your choice, dates, stevia, hone, raw sugar etc)
1 tablespoon Tanna Farms Cold Pressed Naturally Organic Coconut Oil
1 handful of ice
1 teaspoon vanilla extract
Add all of the ingredients to a blender and puree until smooth and creamy. Serve straight away.
